No-beef vegan stew blog post coming up tonight🙌🏼
To say I'm proud of myself would be an understatement 🙈
This dish reminds me of road trips I had with my parents when I was little. We would stop on our way back for a beef or venison stew or so called goulash. Okay, tbh my dad would have goulash, my mum would have something fancy that I can't even pronounce and I was always basic and had something like grilled meat with fries 😂 
Anyways, as you can veganise everything, I have decided to recreate this dish and enjoy its taste without any animal suffering. 😊
You can enjoy the stew without gnocchi but would highly recommend trying this delicious combo. I'll share the gnocchi recipe as well.

I have to be honest, I really missed providing content for my tiny Insta world. ❤️ But life happens, ya know 😄 Lots and lots of other work projects happend in the meantime and I cannot be more grateful for every single one of them 🙏 
But here I am, with these yummy chocolate protein pancakes 😍
ingredients:
1 cup oat flour 
1/4 cup almond flour (if you don't have any on hand, feel free to use only 1 1/4 of oat flour)
1 scoop @gaiatribe.official protein powder (dark cocoa)
1 tbsp cocoa powder 
1 cup plant based milk (add more if needed)
1 tsp apple cider vinegar
2 tsp baking powder
1/4 tsp baking soda 
1/4 tsp vanilla extract 
2 tbsp maple syrup 
A pinch of salt
Instructions:
Add the milk and the apple cider vinegar to a bowl, mix and set aside to form buttermilk. (Let it sit for 10-15min or until you notice the curdled bits)
Whilst waiting for that, mix all the dry ingredients in a separate bowl. 
Add the maple syrup and vanilla extract. 
When your 'buttermilk' is ready, combine the wet and dry mixtures.
Heat a non stick frying pan and ladle about 1/4 cup of the batter and cook until bubbles start to form. Flip the pancake and cook for another minute. 
Repeat the steps until you finish the batter (it serves 6 pancakes) 
Top it up with whatever fruit you fancy, more maple syrup, nut butters, more chocolate, plant based yoghurt, quinoa puffs, seeds etc.

It's done within 20min and tastes incredible. 
I used a combination of red and white lentils and served it with brown basmati rice and some lemon slices. 
I also served the dish in my favourite coconut bowl from @tropiqa.eu to make it extra fancy. 
Because..Let's be honest, everything tastes better out of a coconut bowl 🥥😛

Hope you had a lovely start of the year everyone! I'm a bit late..I took a tiny break as I ended up working every single day of the week (including Sundays) for over 12 hours and sleeping for about 4-5h a night🤦🏼‍♀️
